So I've successfully created about 10 discs in the past utilizing the .txt Image, but now I've run into some issues. I can't get my PS2 to read any of the new discs I'm making. Is there something I'm supposed to be doing differently since I made an image from a CD with a blank .txt file on it?

For PS2, which is far touchier about what it will read, use an audio track not a text file.

I'm trying to figure out how to get my computer to burn a CD with a new .wav file on it.

It just. Won't. Do it.

I managed to burn it but... The PS2 still won't read it.

I managed to get it to read one of the earlier discs I made, a purebred Gali. The TOC for the Gali disc had something extra in it. It had two tracks in it. When put into my computer, my computer thought the disc had a blank text file on it.

.wav file won't work either, it's computer data that the PS2 is not designed to read.

You need a REGULAR AUDIO track, as in like a music CD from the store with 74 minutes of music on it.

It still won't work. I decided to figure out if it was the disc, so I tried to mount the image. Alcohol said that it had an error reading the sub-channel file.
