Fire and Calm Stones, Wind Whistle and Drum. Once acquired, should I keep all of them, or are some disposable?

I'd definitely keep the Fire Stone and Calm stone. The other two are up to you, depending on your method. If you are loading the monsters up on other items you may not need them.
