Stolatos uses a strategy similar to Nelson. Their are some differences though, take a look.

This deck relies on the tactic of whittling down your monsters with his Plant, while sapping away your GUTS at the same time to prevent you from doing much. Then when you do get the GUTS to attack a monster, he'll usually dodge. He'll also work on outlasting you, with "busy time" to allow him to convert guts to stacked cards, and the "confusion" environment card.
Usually your main priority is to take out his plant as quickly as you can. Then you can work on the other monsters, or just try to outlast him. The "Close Up" Environment card would be nice to use on him to keep him from dodging, but usually only lasts a very short time, until he gets one of his "confusion" cards out. So your best bet after taking out his Plant is to either try to outlast him, even through busy time and confusion, or to try to manage enough attacks to use up his mocchi and monol defense cards, which can be quite difficult. Usually, throwing a couple "busy time" cards in your own deck can help to outlast this one. You also might want to try to keep a good environment card or "pray" card on hand to try to keep his "confusion" at bay as long as possible.
Luckily, Stolatos isn't *quite* as conservative on discarding cards as Nelson is, so he isn't quite as bad to try to beat out as he could be.
